I see where I can use published datasets in my organization but I would like to make my own. Where can I find out more about how to? I would need to run a query against the reporting server as we are not allowed to add to it, like stored procedures.

You can create shared datasets, plus if your dataset is authenticated it will be easier to find when you connect to a shared dataset. However, when using Desktop to connect to a shared dataset, the connection mode is live connection. there are some limitations.
