The Power Query I originally set up was from Folder, and collected from three csv files.
These are now tab seperated values (tsv) and when I try to modify the query get a bunch of blank rows.
What is the easiest way to convert a, From Folder csv to a From Folder tsv?

They both should use the Csv.Document function in your Transform Sample File query, and you should just have to change the delimiter in that function.

If you already set a connection with folder, you can just change the extent to txt(tab delimited), and simply refresh in power bi. Then right click the content to check tables.

As long as the file names are consistent, in the Csv.Document line, I think it should be as simple as changing your version of...
[Delimiter=",", Columns=4, Encoding=1252, QuoteStyle=QuoteStyle.None]
to...
4,"",ExtraValues.Ignore,1252
