As you can see from the screenshots below, I have constructed a table with Names as rows and DaysOfWeek as columns. I have two measures and am able to create the basic totals for each of them, but I'm not able to create a total for the sum of these measures on the absolute right. I am missing a "Total of Income and Cost" column. Any hints would be greatly appreciated, as I have scoured the web and YouTube for hours in search of this.

No, you're not missing anything. This is how it works. You could create a measure that adds the 2 together, but that will show in the day totals and the total itself. There is no way to selectively display just the items you want as there is in a pivot table.
