I'm looking to have a line and column chart show Volume (bars) against Self Service % (a measure) over time.

It turns out, I'm just a little bit slow and I had clicked Column not Measure. As soon as I changed it to a measure it worked fine, no Date table needed if you use your date column as a hierarchy.

If you want the denominator to be the total number of the whole table, you could use ALL() or ALLSELECTED() function. Then use date column as x-axis to show the whole process.
Make sure you had date dimension and create a previous day measure and take diff
To get the best of the time intelligence function. Make sure you have a date calendar and it has been marked as the date in model view. Also, join it with the date column of your fact/s. Refer :

Your measure is correct. There is definitely a problem with the relationships. There should be a relationship from the Date column of your Data Table to the Date column of your Calendar Table. To your visual, drag the date column from your Calendar Table.
