As you can see from the picture, when a checkbox is ticked you can't really see it because the background color (company theme) is dark blue. is there a way to change the checkbox color to white when a parameter is selected?

Sorry I misinterpreted your question initially.
I suppose the provision you are looking for, is not supported in Power BI as of yet. And I beleive, an idea has already been submitted in the forum as below:

You can create a measure to capture the selection of the text box, something like below:
Color TextButton = VAR a = SELECTEDVALUE([yourColumn])
return if (a <> BLANK(),"Green","Red")
You can now add this measure in the Fille section:
Format by: Field value
Based on Field: Color TextButton
