I have a pipline with three admins and each time one of them makes changes to the dev version and wants to publish it to test he has to first "take over" the ownership. Can I somehow share the ownership of a dataset?

but I couldn't make it work. All three mentioned admins are marked as (owner) in the dataset permission section.

Currently, one dataset cannot be configured by multiple people at the same time.

@BeAUniquorn, the other person who is overwriting should also have owner rights on the dataset. Give a role to that person as owner.
