Semantic models are now pulished to online services and I'm going to share it with colleagues by inviting them into workspaces, so they can "get data" and use those models to build report without any Power Query/ DAX.
Can they download the models, revise the power query and publish to overwrite my version? How can I restrict it? We need to make sure that any changes are acknowledged or it can be dangerous.

you can't restrict it since you're giving them access to it.
you can use pbip to have version control so you can go back or reload previous versions.

If you share by inviting your colleagues into the workspace, take care to assign them the appropriate roles.
Power BI offers different workspace roles, including Viewer, Member, Participant, and Administrator.
Make sure that you have not assigned the Administrator role to your colleague, as this role allows for publishing and updating datasets.
