I have 4 tables which track the number of people who are in that particular part of a process. It's sensitive data so I don't want to give my exact example but I'll try to talk about it a different way.
Table 1 - customerID, date they entered process, preference category 1, preference category 2, etc.
Table 2 - customerID, date they entered process, etc
Table 3 - customerID, date
Table 4 - customerID, date
Table 5 (withdrawal table) - customerID, date they withdrew, reason they withdrew.
I want to create a Sankey of this process showing how many get through to the next process and how many withdraw at each step of the process.
Would someone be able to help me out on how to tackle this? I'm guessing I'm going to have to create a new table like:
Sankey Table - From, To, Count
but I've no idea how to create this table either using the data i've got.

That doesn't sound like a good data model. Can you identify dimensions and facts? Can you identify source and destination fields in your fact table? (You need that for Sankeys)
Please provide sanitized sample data that fully covers your issue. If you paste the data into a table in your post or use one of the file services it will be easier to assist you. Avoid posting screenshots of your source data if possible.
