I hae a matrix where I have three dimensions that I want to be stepped and then another one which I want to be to the right of those measures in a separate column. But I only see the option to make so that none of them are stepped. Is it possible to change it so that only one dimension is in a non-stepped format?

Stepped layout controls all levels in the hierarchy. We can't set stepped layout separately. I suggest you create an idea for it in https://ideas.powerbi.com/forums/265200-power-bi-ideas to improve the power bi.
