I've created a Power BI model and set up Perspectives that can be used in Power Pivot.
Is there a way to change the connection to a Power BI dataset from within Report Builder so that only a specific Perspective is seen?

Just found the answer in Report Builder Query Designer.
To see Query Deisgner Right Click your Data Source -> Add Dataset -> Query Designer
In Query Deisgner clicking on the ... where the default "Model" is displayed then other Perspectives that are present can be enabled
