Bulk Find and Replace from free text data

I have appended 4 datasets that contain patient demographic data for Gender, Race, Ethnicity and Marital Status. Each Dataset allows free text in several of these fields. Total it is 9,642 lines of data so individually touching each option will be time consuming. I'm seeking an alternative method to find and replace existing data to set choices. Example: Race will now be 

White/Anglo            Black/African            Asian

Pacific Islander        Hispanic/Latino         Bi/Multi-racial

American Indian/Alaska Native                  Missing Data

Below is a screenshot of the current state of affairs I am working with and need to change.

The other columns are much the same. Thanks!
