I have the following problem: The source table changes the data every day and deletes them so I would like to copy them incrementally to another table so that I can have the history. It's possible?

Unfortalblely, power bi desktop doesn't include in the cache history data feature. These old version data will be updated/replaced if your source data changes.
Perhaps you try to use integrate R or Python scripts to backup operation to export these history data to local device and name with system DateTime.
