I have a single table, sales, that contains all my sales records. I would like to create a single chart that shows stacked colums based on the customers listed in each sales records. Ideally I could select a few customers, add them to a group, and that would be one of the stacks, rinse and repeat. Is this possible in either service or desktop? I have a feeling I could do something on the query level in desktop, but I'd like to start with service.

The grouping feature is only available in Power BI Desktop, you can follow the guide in this official article to implement grouping. After create data model and reports in Power BI Desktop, you can publish the reports to Power BI Service.
