A client has asked me to find out about the limits (if there are any) on assigning premium capacity to a workspace.
I know there is the data cap of 100TB, but is there also a max cap on the numbers of workspaces you can assign premium capacity to? They would like to know the answer to this because they have basically been adding premium capacity to workspaces to anyone that has asked for it.
I've tried to dig for an answer, but the ones if found are quite dated so maybe there is some new information regarding this question?

There is no maximum limit for No of workspcaes for Premium Licence , it is based on capacity.

We do not have "Premium Capacity".
But, could you help me to know how I understand what our Capacity is and how much is being used?

The Standard/Shared capacity is being managed by Microsoft only and we can not see the capacity details (VCores, Memory and utilization)
We can see these details for the premium capacity the we subscribed using Power BI Premium Capacity Metrics App provided by Microsoft
