My data sits on multiple SQL servers. Is it a good option to have a separate Power BI server on Azure and set up a gateway on that and from there can we pull data from different SQL servers to the Power BI server?

You can certainly install it on a VM in Azure.
All that needs to happen is the Gateway needs to be installed on a Windows Operating System.

Another thing is to keep the on-premise data gateway to run as the latest version.

I'm not sure what you mean by "Power BI server on Azure"?
Are you referring to this https://powerbi.microsoft.com/en-us/report-server/ that is installed on a virtual machine running in Azure?
The on-premises gateway is intended to connect the Power BI Service with your on-premises data sources. If the virtual machine that is hosting the Power BI Report Server is integrated in your local network, it will not be necessary to install a on-premises gateway.

Thank you @TomMartens for your reply. My all data sources are in Virtual machines. I was planning to buy a new server(VM) which will be on Azure and from there I was planning to install a gateway and pull data from my sources. Is that a good idea?
