Hi,
My company is working on a large documentation process for all of our Power BI reports, and I am looking to see if its possible for us to obtain all the data that makes up each report.
I looked into the audit logs, but those seem like they are only for event logging. I am looking for information on the tables, columns, and measures that are used in each report. Is this possible for me to obtain?

If you have the PBIX, you can use DAX Studio. Tables are part of the default view.
To display all measures, use:
select * from $SYSTEM.TMSCHEMA_MEASURES.
To get all calculated columns, including system columns, use:
select * from $SYSTEM.TMSCHEMA_COLUMNS where [Type] = 2
I don't think there'd be a way to do that out of the Service, because that would cause a ton of security issues for external users.
