I am pulling data from a web API but I want to change the datetimemin paramter in the URL to just pull Today(). How would I structure this query?
Source = Json.Document(Web.Contents("https://api.calln.com/api/call?datetimemin=2019-10-07"))

I'd like to suggest you to use date function and DateTime.localnow to extract current date and use in API link:
let
localdate = Text.Format("#{0}-#{1}-#{2}",{Date.Year(DateTime.LocalNow()),Date.Month(DateTime.LocalNow()),Date.Day(DateTime.LocalNow())}),
test=Json.Document(Web.Contents("https://api.calln.com/api/call?datetimemin="&localdate))
