I've created a Sharepoint site and it automatically created a Workspace inside PBI service.
Why? From what I've read, the opposite happens, but I couldn't find anything on why creating a site also creates a workspace.
Can I use this created workspace to publish my reports to?
Should I? Or should I create a separate workspace?

It is by design.
In SharePoint Online, modern team sites are created with an associated Office 365 group by default.
Creating an Office 365 group binds it to an classic workspace.
You can use this created workspace to publish your reports .and directly access the corresponding sharepoint files directly through the "Files" option of the classic workspace.
If you really don’t want to create such a classic workspace, it is suggested that you create a communication site or a modern team sites without office 365 group .

When creating a sharepoint site, you may have generated an Office 365 groups.
Normally, there is a one-to-one correspondence between office365 groups and classic workspace. When you create a classic workspace, an office 365 group will be automatically generated, and vice versa.
If you want to block classic workspace creation,please check Power BI tenant setting " block classic workspace creation" in Admin Portal . By default, it’s disabled
