I am experimenting w/ DF and tried to upload a few .csv files , then initated a Report and found I can only use one of my datasets. How do you add a 2nd or 3rd one? Do I simply continue to use the desktop? I am training on DF now so I may seem a little ignorant.

You can add csv tables with "Add Tables" on Power BI Service Dataflow.
Then get the dataflow using Power Bi desktop app. In power query, you can refresh to see the new tables in the navigation step.

Thank you. I tried this and my Dataflow is still "pending Validation" . I will have to see what that means as I most likely do not have the correct capability/access, etc

you can add further tables to an existing dataflow.
Just click on its name and a window like this should appear:

How do I add in dataflows to my .pbix files, etc? Do I start a report in the desktop-upload it and then connect it to a Dataflow? I simply cannot find a tool to do so.
thanks for the reply but I was referring to creating a report in the cloud app. I am unsure how to utilize each actual data flow...like how do I actually "bring it " into my report, etc. I have been searching online but to no avail.

yes, you have to use the Desktop App and then under "Get Data" search for "Dataflows". The highlighted connector is the newest one, so I'd pick that, but the other one should work as well:
