Is there a connector in Excel to get data from an Exchange email client? I can get it in Power BI no trouble, but there seems to be no similar connector in Excel.

Yes, it is there. Use the "From Online Services" if your Exchange is part of Office 365 or otherwise hosted.
Not all versions of Excel have this. Excel as part of Office 365 home does not. See this article. You need either an Enterprise license (E3, E5), or Office 2019 Professional Standalone, or probably one of hte government or educational equivalents.
DAX is for Analysis. Power Query is for Data Modeling
