I'd like to know if is there a way to pass a query refresh depending on a variable. For example, not to try to read a table depending on day and keep data of a before query.

Sorry, I don't think so. Is the table the result of a complex calculation (i.e. takes hours to run), but you can persistent in temp table (i.e. run without the complexity). This will just turn the refresh into a simple read task. It could run faster, but this solution is still outside the M query language.
@daniel_ricardo - Do you have Premium capacity? If so...
there is an option in Power BI that excludes a Table for the normal refresh (don't uncheck "Enable Load"). The excluded table can be refreshed manually using an "XLMA" API call. This API will require Premium capacity.
