Such kind of issue is caused by how Power BI handles colors. To resolve the issue, pstart over by hitting the "Reset to default" at the bottom of the “Data colors” card and explicitly select a color for *every* entry in the data colors. After that, please republish it. Product group has a future scenario to improve how this works, but it may needs some time. Thanks for your understanding!

May I know what’s the version of your Power BI Desktop? I tested with the latest version of Desktop(Version: 2.103.881.0 64-bit, March 2022). As you can see, it works well.
If you are not using the latest Desktop, please try with it. Here is the download link of the latest version: Download Microsoft Power BI Desktop from Official Microsoft Download Center. If you still have this problem in the latest one and don’t know the cause of it, could you please provide a download link of a sample pbix file that contains your issue so I can do further investigation on it?

And I think you could try to replace the “(“ and “)” parts in your workaround formula with “” to remove ( and ) from the visual.

Could not reproduce it in my side as fat as my test.
Whether it could be a temporary issue in Power BI Service, you can try to check it in other time ranges in Power BI Service to confirm whether it still happens.
If this issue still happens, please consider providing more information about it like the data source type(looks like OneDrvice personal?), workspace types etc.

If Power BI Desktop, what version are you currently using?
Do you have a measure set in your filter, and would replacing it with a calculated column solve your problem?

I can't reproduce your problem, my test version is Version: 2.103.881.0 64-bit (March 2022) , maybe you can update to the latest version of Power BI Desktop to see if that helps.
Or you can go to Options and Settings in Power BI Desktop ,Options > Data Load > Data Cache Management Options > Clear Cache.

Thanks to nargesr for sharing, when you encounter this kind of problem, you may try to adjust the page to Fit-to-Page view.
Currently the new format pane is still a preview feature, to go back to the old format, you can disable the 'New format pane' feature in options and restart Power BI Desktop.

Currently, Power BI Desktop does not have a setting to switch modes. If you think the background is too bright, you can import a theme with a dark background, but the menu bar is still light. Or you can activate Windows' dark mode, but this will make all your programs dark .
You can also post your ideas on the Ideas forum and wait for Microsoft's evaluation. Maybe in the near future, your ideas will be realized.

Up to now, it is unavailable to disable the clickable feature in Donut charts.
You may also vote the idea and comment there to improve this feature. It is a place for customers provide feedback about Microsoft Office products . What’s more, if a feedback is high voted there by other customers, it will be promising that Microsoft Product Team will take it into consideration when designing the next version in the future.

According your description, I think you may have enabled New Format Pane in Preview Options. Please try this step to disable it and then you will see the Format pane and the properties displayed as before.
File>Options and Settings>Options>Preview features>Untick New Format Pane
Starting with the February 2022 release of Power BI Desktop, the redesigned Format pane is on by default and the product group plans to update the format pane step by step. But you still can switch to the old pane just by using the method above.
