The above is a dynamic table that changes "Date" values once daily. I need this data to append to the #"Daily Chart Count" table daily without it overwriting any of the existing data. How do I do this?

AFAIK, the current power bi does not include any historical analysis features to cache the history data.
You need to back up these daily records to the external data source then you can use power bi to get data from these cached records.

Does power bi have the ability to auto-write (like, for example, using Power Automate) to an external data source, and what sort of external data sources might you have in mind?
