looking to show the new total value after remove the current item( or Product) weekly

Hi All , need some advice.
What Dax functions I can use if I am looking to show the new total value after remove the current item( or Product) weekly?

This will help me see if the item(product) is makinga possite or negative impact to the total value.

it work... and yes EXCEPT  function is difficult... much more when you try to take that result and  try to use the function RANK
