My Question:-
There is 1GB, 10GB. 20GB data tables available in that which connection we can go head each one ? and what type of gateway we can use it all 3 categories ?

For a 1GB data table, you can use either Import connection or Direct Query.
With DirectQuery the data will be retrieved from the source system in real-time, while with Import it will be loaded into Power BI and stored in a compressed form.
Tip : with Import, consider using the Power BI Paginated Reports or Dataflows features to help manage the data and improve performance.
For a 10GB/20GB, Import is the highly recommended connection type, since DirectQuery may fail to handle the volume of data in real-time.
Another important point is the gateway:
the On-premises : designed for organizations that need to connect to on-premises data sources
the PBI gateway : designed for users who need to connect to data sources that are not accessible from the cloud
