I'm pretty advanced in Power BI but I still don't understand the advantage of hierchies. Why would it be better to create hierachy A, B,C and put that in a barchart than just putting variables A, B and C in the same order in that barchart?

Create hierarchy to decide fields in different levels, while when you add multiple parameters, the level is determined by the order in the field. For example, in the following screenshot, the volumn is in the first kevel, the Date is in the second level.

Using hierarchies, you can display your data in different levels and more organized. After creating hierarchies, you can drill down your data in visualization. More details, please review the following articles.

For large datasets (so you dont have to look for corresponding columns everytime) and/or for using the drill down function
