Greetings! Given the Scrap Table and Production Table below (that could be combined into one data source if best), what formula will give me the Scrap Percent of Gross for the week. For example, Nicks for 03/26 should be 106 / 900 = 11.77%, and Porosity for 3/19 should be 235 / 1450 = 16.21%

You need a date table. Then the measure could be as below. If you want more accurate solution, please provide a dummy sample.
Percentage = SUM ( scrap[quantity] ) / SUM ( production[quantity] )
