I have data on staff course enrolments where I have a due date column.
What I'm wanting to do is have a visual that shows how many are 1 month, 2 months, 3 months, etc etc past their due date.
Any ideas on how best / efficient to get this into a visual?

I'd like to suggest you take a look at the following blog about dynamic segmentation:
Dynamic segmentation – DAX Patterns
You can create an unconnected segmentation table and use it as the legend of the chart, then you only need to write a measure formula to calculate based on the current date range and legend group.
