como puedo construir un objeto visual de tipo tabla en donde el usuario pueda aparecer o desaparecer filas (dimensiones)?

The simplest way to do this is to use buttons and bookmarks. (though I won't get any marks for button creativity..)

como le das la configuración a la tabla para que se vayan quitando los campos?

entiendo que a los botones accionas los marcadores, pero no logro entender como los marcadores están relacionados con la tabla.

Tienes que replicar la tabla 3 veces:

1) se ven ambas columns

2) se ve producto

3) se ve cliente

creas los marcadores para mostrar/esconder lo que toca para cada marcador y configuras los botones para cada marcador.

Si te descargas el archivo PBIX que adjunté, podrás ver cómo están configurados los marcadores y botones bajo "View" -> Selection Pane y Bookmarks
