I'm working for a housing association and I want to create a dashboard for the compliance team. This would show when gas safety check deadlines are coming soon. In the table would have property code and gas safety expiry. Ideally, I'd want there to be scalings of colours of how close they are e.g. dark red if within next week, light red 2 weeks and orange within a month etc. Is this doable? If so please help me to find out how!! Thanks Guys.

You could use Conditional formatting function in power bi,
Add a conditional measure and then use it for Conditional formatting.
By the way, some of visuals conditional formatting is in Formatting-> Data colors->Advanced controls
