The majority of the time that I try to export PBI Desktop files to PDF, it will go through each tab and then crash out on the last tab without exporting. I currently have version 2.78.5740.721 32-bit (February, 2020). Is there a fix or workaround for this?

Crash with Export to PDF is a known issue but there isn't specific reasons or ways to fix that. You can first try the steps above. I would suggest a workaround that publish to Power BI Service and then try export to PDF from Power BI Service.
If this issues still occurs, you could create a issue in issue forum or create a support ticket for quick response.

I'm using February 2020 version too and I tried to export my report to PDF just now, it works and no errors.
I think a way to find your problem is :
1. save as your report to a new one, then click the export to PDF, then to see whether it works or not
2. if works, then we will know the problem is on the last page.
3. same method, for example, if you have 2 charts on the last page, delete one of them, try again.
4. just to find where the problem is, then we can try to find a way to solve the problem.
