Slider / checklist filters (slicers) work at page level. Is there any way I can disassociate selected tiles from the filter, e.g. ensure that a “Grand Total” card always shows the grand total irrespective of filter settings on the page?

Select the slicer, then in the format tab, enable "Edit interactions", then in the card select the none icon (circle with slash through it)

Your "grand total" card can use a Measure which specifies "ALL" for the relevant filters, like the following:
Grand Total = CALCULATE( SUM('Your Table'[Your Column], ALL('Date'),
ALL('Product') )

Thaks for this, the solution works.
BUT once I've "un-linked" the sldier from a visual, I can't seem to re-link it - am I missing something?

Ah, may be a different version of Power BI. I'm using the May 2019 version. Does it work to click the "Filter" Icon?
