I have a field in my dataset that is MM:SS I converted it to this... and I want to have another field that displays this in seconds. I am hoping someone can assist me with this one.

Based on my test, you could refer to below formula:
TimeInSeconds = (HOUR('Data'[AvgTalkDuration])*60+ MINUTE('Data'[AvgTalkDuration]))*60
Result:
You could also download the pbix file to have a view.

How about creating a new column like this:
TimeInSeconds = VALUE ( LEFT ( Table1[Column], 2 ) ) * 60 + VALUE ( RIGHT ( Table1[Column], 2 )
where Table1 is your table and Table1[Column] the column with the MM: SS
