Is there a way to see how much I am trying to refresh? Currently, I am just going in and removing columns from my query and trying to republish. This is taking a while as it is just a trial and error process. Can anyone one tell me if there is a way to see how close I am?

You can see table sizes by putting this code in DAX Studio and running it.
SELECT dimension_name AS tablename,
attribute_name AS columnname,
datatype,(dictionary_size/1024) AS size_kb
FROM $system.discover_storage_table_columns
WHERE dictionary_size > 0
