the QTY of SKU is always 1 for each line of event, so the number of consumption is : Count [SKU] ( or count any column in that table)

How do i get the the StD in PBI?

For your case, create a measure as below:
Measure = STDEVX.P('calendar',CALCULATE(COUNTA('Table'[SKU])))

create a column as
_weeknum = WEEKNUM('Table'[Date Time])
then create a measure as
Std_Dev_Qty = CALCULATE(STDEV.P(table[SKU]),ALLEXCEPT(table,table[Devide ID],Email[Dow]))
Change SKU to the desired column on which you need the STDV.P
