Hello,
I have a field called Fiscal Period and it consists of 27 periods. I addded it to the columns in matrix and I would like to have an ability to sort data in matrix by every of periods. Is it possible? What I can do now - to sort by total value only.

As of now, it is not supported to sort data by each column header. Someone has submitted this feature request, you could click to vote up or add your own comments.
Sort by individual column values in a matrix
matrix can be sorted by any column by clicking on the column header

Yes Im afraid you can only sort by total value only in a matrix currently
