Hi,
I am trying to show in columns chart Low Risk, Medium Risk and High Risk and the values for each.
However, when I create the chart in PowerBI, it is sorted by the values highest to lowest. I am trying to sort by Low, medium and high on the x-axis by the values.
How can I sort so they show up in this order instead of higher values or lower values first?

It's putting them in alphabetical order. You'll need to create a column to sort by to get them in the appropriate order.
