Is it possible to sort by the column Age in the following table?
I can sort by the columns Area and Order but not by the following tables including Age? Isn't this possible with the matrix visual? Is the another similar visual (costum?) where this is possible?

In your data, seemed that the Age column is in text format. Could you please change the Age column to number and sort it again?

The Age column was already in number format. The columns in text format can be ordered too.
I think the problem must be related with my matrix setup, i think the Matrix Visual with that setup (all the parameters are rows) only allows to order inside the last group, example: in the column Order it orders inside each type of Area as you can see in my last print. But in the column Age it doesn't order because it's a one to one relation between the Columns Name and Age, unlike the relation between the coolumns Area and Order that is one to many (and there it orders inside each Area).
What do you think? Try to simulate my example and test if you get the same result.

Hmm, how is your matrix setup? Columns, rows, etc. I put together an example matrix with columns and measures and I can sort by anything
My setup is diferent:
As you can see i already cliked on sort by age and it didn't sort.
Try to put a data set and configs like mine.
