I am sorry...this will appear a FAQ, but I clearly am missing something very simple about 'sort by column'
If i enter a simple table
SortOrder Category
a aa
b cc
c bb
If i then add a very simple table visual:
Category
aa
bb
cc
It is obviously sorting by ascending Category. If I then select the field 'Sort Order' and go to Modelling\Sort by Column and tick SortOrder....wouldn't I expect to see:
Category
aa
cc
bb
?
But I don't...it doesn't sort by the column I have selected. Plainly I am missing somthing super obvious.

You have to selected the filed you want to sort, then go to sort order and pick the field you want to sort your selected field by.
Select the category column in your table then under sort by pick your sort column.
Here is an example of sorting the [Month Name] column by the [Month Number] column:
