Set a range value min and max

So I wanna build a Stat Bug Dashboard that alert me when a sensor goes out of the given range. I wanna use Guage as visualazior. The sensor have temprature rang 40 – 125 celsius. when it's below or over that number then it gonna show "warning" by the color changing.  Any example how I can solve it?
