Is there a way to change your grouping variable by chosing from a list of options? For example: allow users to view the number of records by either age, gender or ethnicity by selecting one of the 3 options from a drop-down list.

If you want to dynamically change axis, I suggest you combine button and bookmark: https://radacad.com/bookmarks-and-buttons-making-power-bi-charts-even-more-interactive
