So as the title would suggest, because of column header translating reasons, I had to use a matrix instead of a table for some data, but the matrix doesn't sort the values if I click on a column header. Is there a way to achieve this?

You can use an custom column to order your columns . We can do that with following steps. Assuming we have a table like below.
(1)We can add a reverse index.
(2) Close and apply Query Editor, select the Type column and make it sort by column of Index.
(3) Now the order of the column heads will follow the Index.
(4) If you want to put it in a custom order, you can customize the index yourself. For example, you can create a conditional column in Query Editor.
