By default, the options in a dropdown filter are arranged A-Z alphabetically.
What if I wanted to say, reverse that order? Or even do a custom order? Are either currently possible?

For reverse sort, you should be able to select the "..." (More options) on your filter visual and see a sort option
If you want a custom sort, then you need to create a sort key associated with each value, then go to the Data view, select your table, then select Cust # . Then in the Modeling tab, select Sort by Column and select the sort key
