Insert data into a Source table from a spreadsheet that drops previous data on refresh. (Snapshot?)

I have an Excel source, where the data in Excel is deleted & replaced rather than appended to the rows in the spreadsheet. I was wondering if there is a way to use this source in Power BI, make my changes to it i.e Pivot, add a refresh date, and append it onto another source table.

The end result would be that when the excel is refreshed on a weekly basis, the Source in Power BI would hold onto (Not delete) all the previous data already in the table (in Power BI) and append the new data.

I had a look at this post: https://community.powerbi.com/t5/Desktop/Data-Snapshots/td-p/354840 but was wondering how to implement Option 3 as it sounds about right. I need to insert (but from 1 source in Power BI to another)

Thank you in advance.
