When you select a visual you can add additional fields onto it as 'Visual Filters'
Drop your date field onto the graph you wish to only show the most recent 8 days
Then change the date filter type to Relative Date Filter and then select 'Is in the last' and enter 8 days.
Apply the filter and I'd also use the eye icon so you hide that filter to avoid your users from changing it.

You can drop the Date field as a filter on the visual and select
Within the Last 8 days
