I have a table which has around 300 different categories... So was wondering if the Power BI Filter can hold that many categories for me to filter my chart??

You won't have any trouble from report, page and visual level filters with 300 categories. I have over 6000 on one of my reports and it works fine.

Sure. You can use a dropdown/list.
Also, You can enable the search option. So that users can easily pick the category from a large list.
