It may not be easy to get the desired result using the average function, but other functions can be used to achieve the purpose, such as
average =DIVIDE ( SUM ( 'table'[Score] ), 9 )
OR: average =DIVIDE ( SUM ( 'table'[Score] ), COUNTROWS ( 'table' ) + 1 ).

Try to create a calculate column like below:
Return =
IF (
'Table'[name]
IN {
{ "Sewing1" },
{ "Sewing3" },
{ "Receiving" },
{ "Quilting" },
{ "Matt Build" }
},
'Table'[name],
BLANK ()
)
Note that to replace the text above with your actual text
I created a simple sample to illustrate this.

I want to know if its possible to overwrite the denominator when using average in Power BI. what I mean is in the table listed below I want the average of the 8 process but I want to divide by 9 instead of 8. is that possible

Countrows(filter(Table, Table[Name] in {"Process Audit Sweing 2", "Process Audit Loading & Swing" , "rocess Audit Foundation", "rocess Audit Unit Building"))
You can plot this with name in visual, if needed
This is what I got, I wanted to have seleted items in list, if I were to put them in a table.
