my problem is that I have to make a basic line graph out of this table but only for one date at a time. So in this case I underlined the 02.01.2020 and I need the x value and the corresponding y value in a line graph and I have to be able to change the date on the report-page at any time.
I have tried a lot but I am somehow not able to do it.

You only need to create a link chart with x on axis, y on values, then use slicer or visual level filter with date fields to control which graph displays. (if you do not apply the filter on date, line chart will display the summary graph)
In addition, if you want to display multiple lines at the same time, you can consider adding date to legend fields to color your lines.

Create a slicer with the date then do your chart with the x on the x on axis and Y on values.
Then just choose your slicer options to be single selection.
