I'm facing some challenges and was wondering if someone can help?
I want to create a card that shows the number of employees whom are expected to join the organization within 3 months from today's date based on their start day that they put down in their offer.
Any tips on how to do so?

I assume you have your employee table for each employee with the start date. Create the following measure and use it on card visual.
Emp Count to Join in Next 3 Months =
var __today = TODAY()
var __3month = EDATE(__today,3)
var __result =
CALCULATE(
COUNTROWS( Table1 ),
Table1[Start Date] >= __today && Table1[Start Date] <= __3month
)
return
__result
