unfortunately there is not much information about the connector to Exasol. More precisely I would like to know which transformation steps in Power BI are query folding on Exasol backend?
On one hand the option "View Native Query" in Power Query (when right-clicking a transformation step) is always greyed out (even for the simpliest transformations like filter), on the other hand the monitoring on Exasol side (system tables that show what sql queries were generated in the last X hours) shows that some of the transformations are being indeed folded to Exasol.
So why is the option "View Native Query" always greyed out (allthough the transformation is being folded) and to get back to my actual question -> which transformations can be folded when connecting to Exasol? (ideally there would be a list of foldable transformations for Exasol, like you can find similar list for SQL Server).

I don't have much knowledge about Exasol, but the View Native Query option is only available for certain relational DB/SQL generating connectors.
It doesn't work for OData based connectors, for example, even though there is folding occurring on the backend. The Query Diagnostics feature is the best way to see what folding has occurred for non-SQL connectors (although the steps that fold aren't explicitly called out—you just see the resulting URL that was generated).
So even though view native query greyed out, the query folding would happen also. For more details, please refer to https://docs.microsoft.com/en-us/power-query/power-query-folding
